As you all know, I am on a healthy lifestyle change. I am always looking for low-fat/low calorie recipes. Well, I do not disappoint! I have yet another recipe to share! Pumpkin Spice Muffins!
Ingredients:
1 box of Spice cake Mix
1 small can of Pure Pumpkin puree.
(that's right, only TWO ingredients!)

Step 1: Mix the Spice cake mix and the pure pumpkin puree in a mixing bowl. Make sure it is thoroughly mixed.
Step 2: Spray muffin pan with Pam OR line with cupcake liners and fill them approx 3/4 of the way. (The batter is not of the runny variety)
Step 3: Bake for approx 10-12 minutes (or until a toothpick inserted comes out clean) at 350 degrees.
Enjoy them warm or cold. They are delicious either way and ONLY 97 CALORIES! (Or 2 weight watchers points if you are following the program.)
